Food poisoning results from eating food contaminated with harmful bacteria, viruses, parasites, or the toxins they produce.

Food Poisoning Symptoms

Nausea, vomiting, watery or bloody diarrhea, abdominal cramps, and sometimes fever are typical. Symptoms can appear within hours of eating the contaminated food or take a few days, depending on the cause — a shorter onset time often points to a toxin (like from Staphylococcus aureus), while a longer one suggests bacteria that need to multiply first.

How Long Does Food Poisoning Last?

Most cases resolve within one to a few days without specific treatment. Some bacterial causes can last a week or longer, and certain parasitic infections can persist for weeks if untreated — symptoms lasting more than a few days without improvement are worth getting evaluated.

Treatment

Rest and rehydration with water, oral rehydration solutions, or clear broths are the mainstay of treatment; anti-diarrheal medication isn't always advisable since it can prolong the presence of certain bacteria in the gut, so it's worth checking with a pharmacist or doctor before using one. Antibiotics are only needed for specific confirmed bacterial or parasitic causes.

When to See a Doctor

Seek medical care for a high fever, blood in the stool or vomit, signs of dehydration (very low urination, dizziness, extreme thirst), diarrhea lasting more than three days, or symptoms in an infant, elderly person, or someone with a weakened immune system.

Preventing Food Poisoning

Most food poisoning is preventable with basic food-safety habits: cook meat, poultry, seafood, and eggs to a safe internal temperature, refrigerate perishable food promptly (within about two hours), keep raw meat separate from other foods to avoid cross-contamination, and wash hands, utensils, and surfaces often. Extra caution is worthwhile with foods that carry higher risk, such as raw or undercooked meat, unpasteurized dairy, and raw sprouts, especially for pregnant women, young children, older adults, and people with weakened immune systems.
